Roasted Mashed Sweet Potatoes

Roasted Mashed Sweet Potatoes

Ingredients

  • 4 large sweet potatoes-unpeeled, about 3 pounds. Remove the pointy ends and cut into 1 inch pieces.
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt

Ingredients

  • Preheat the oven to 300 degrees F.
  • Place sweet potatoes on a glass making dish, coat with olive oil and sprinkle with sea salt.
  • Cover with foil and roast until easily pierced with a fork, about 45 minutes.
  • Mash roasted sweet potatoes with fork.
  • Season with more salt if necessary.

****I don’t peel the sweet potatoes because I like the texture of the roasted sweet potato peel mixed in with the mashed sweet potatoes. If you don’t like the peel, go ahead and peel the potatoes before you cut them into 1 inch pieces.
